Studio of Cooking Technology.
In our well-equipped global cuisine studio students learn the traditions of global cuisine. Global cuisines can be categorized by various regions according to the common use of major foodstuffs, including grains, produce and cooking fats. Regional cuisines may vary based upon food availability and trade, cooking traditions and practices, and cultural differences. For example, in Central and South America, corn (maize), both fresh and dried, is a staple food. In northern Europe, wheat, rye, and fats of animal origin predominate, while in southern Europe olive oil is ubiquitous and rice is more prevalent. In Italy the cuisine of the north, featuring butter and rice, stands in contrast to that of the south, with its wheat pasta and olive oil. China likewise can be divided into rice regions and noodle and bread regions. Throughout the Middle East and Mediterranean there is a common thread marking the use of lamb, olive oil, lemons, peppers, and rice. The vegetarianism practiced in much of India has made pulses (crops harvested solely for the dry seed) such as chickpeas and lentils as significant as wheat or rice. From India to Indonesia the use of spices is characteristic; coconuts and seafood are used throughout the region both as foodstuffs and as seasonings. It is very interesting for our students. The catering industry derives its services from the food chain in all segments of the economy since food is a major requirement for healthy living. The tourism business is growing steadily in the country, in the areas of historical/traditional/modern tourism involving arts, leisure and entertainment. This program puts the training needs of both industries as an integrated package. In recent years, the foodservice industry, otherwise, known as catering and hotel services have changed considerably as a result of changing market trends, in terms of food composition, safety requirements, selection of food packaging materials, labelling and preparation procedures for ready-to-eat foods and wide variety of food choices by consumers. These changes have therefore, influenced considerably the activities and nature of foods available in the sector such as traditional foods, street foods, fast foods, restaurant foods, the direct consumption of take-away foods and tourists’ foodservices outfits. The Foodservice and Tourism program will provide an appropriate training medium for human resource development and wide-scope exposure of graduates in the frontiers of knowledge needed to solve the problems of this sector. In order to improve the learning process of students classes are held in the form of public lectures, "round tables", workshops, discussions and seminars with the participation of guests and professionals in the service industry.
